Apricot-Glazed Chicken with Dried Plums and Sage

This is an elegant way to make a whole lot of chicken that tastes really good. It’s kind of sweet and sour — sweet from the apricot preserves and the plums, and sour from the bit of vinegar. But what makes this dish are the sage leaves. They give a distinctive taste and make it a beautiful, festive platter that you can really be proud of.

Ingredients

  1. 2 chickens, cut into pieces
  2. One 12-ounce jar apricot preserves
  3. 12 to 15 medium dried plums, pitted
  4. 1 tablespoon white vinegar
  5. A few pinches of salt
  6. 20 grinds of freshly ground pepper
  7. 10 cloves garlic, peeled
  8. 20 to 30 sage leaves

Directions

  1. Preheat oven to 400°F.
  2. Trim any extra fat from the chicken pieces and transfer them to a large roasting pan or broiler pan. If you don’t have a roasting pan that’s large enough, use 2 identical 9 x 13-inch baking pans.
  3. Mix together the preserves and the vinegar in a mixing bowl. Dump over the chicken, add the remaining ingredients, and toss with the chicken until the chicken is evenly coated. Arrange the chicken pieces in the pan(s), skin side up, and spaced evenly apart.
  4. If you want to prepare this in advance, you can do everything up to this point, cover the pans, and put them in the fridge until you’re ready to roast the chicken, but bring it back to room temperature before roasting.
  5. Roast until the tops of the chicken pieces are browned, about 35-40 minutes.

This has been a wonderful year, major transitions that felt like the end - but now with hind sight - they were new beginnings. Now - at the end of the year I am poised to follow through in a positive direction.

Some of the projects I am working on:

Going There,  Global Destination Service: “Inter-Consultant Communications Exchange”:

 A Blog, Forum and Contacts Database that will bring some cohesion to their global work force.

 This is a tool that incorporates several fundamental online applications and integrates them into a dynamic solution for management and consultants to communicate, train and learn, get support and access corporate information necessary for proper workflow process.

 

Bradford Free Evangelical Church

Creating a website for a small church in Vermont with a Pastor that has a Big Vision!

Kids with a Promise, Hope for New York.

On the weekends I am helping this wonderful organization as a volunteer mentor to young New York City kids to show them there is a path to a more positive life. I work with a great group of volunteers and the kids themselves are just amazing!! I sometimes feel as if they are teaching me!  I am also creating a blog and forum for them that will bring excitement and exchange among the kids (most of them are web savvy so will be very critical of me I’m sure!) and the other mentors and the organization with all of us!

My own sub-career!

As a photographer, it was put on hold this year (and the previous two!) while I worked through the many issues in my life. But photography, along with its technical side, continues to be my main passion. My web site highlighting my portfolio of wedding photography can be accessed on the link on the right but it is being updated and will be ready in early  2009 and I can’t wait to get back into it.

These projects will see me into the Christmas season ( for some that seems to have already started given the early decorations that are lining the city streets already!! )
